MAYC is a collection of mutant/zombie Bored Apes that launched via a "serum" which Yuga Labs airdropped to 10,000 BAYC NFTs: the serum can be used to mint Mutant Apes. The newly minted Mutant Apes will either maintain a faintly identifiable outward appearance with the original BAYC form, or they will develop (mutate) very rare traits.
